Adding a playful twist to its offerings is the “The Art of Mahjong” cocktail menu, inspired by the traditional Chinese game. For those seeking a culinary odyssey, The Aubray, positioned at 17 among Asia’s Top 50 Bars, awaits. This visionary Japanese izakaya welcomes epicureans from around the world, providing a cosy haven for global culinary enthusiasts. The bar’s eccentric tapestry of flavours tells a tale with every dish, and each sip is a revelation. The four-seat omakase cocktail bar offers a unique “liquid dinner” experience, with a cocktail menu inspired by Japonisme. Eight new cocktails represent different geographical indications of Shochu, showcasing the versatility of this popular Japanese spirit. The Aubray isn’t just a bar; it’s a portal to a world where innovation and gastronomy dance in perfect harmony.

Penicillin ranked at number 26 among Asia’s Top 50 Bars, stands as a trailblazing sustainable bar, embodying a ‘closed-loop’ philosophy that fuses environmental consciousness with mixology innovation. Leveraging technology like rotovap distillation and centrifuges, Quinary engineers drinks that transcend the ordinary, stimulating the senses in an avant-garde dance of flavour and innovation. In a side alley off Hong Kong’s Aberdeen Street, The Old Man stands as a groundbreaking Hemingway-themed bar that seamlessly blends the spirit of the iconic American author with an infusion of Asian charm. The bar’s innovative design removes the traditional barrier between bartender and guest, creating an atmosphere reminiscent of a coffee-house-speakeasy where the drinks flow and ideas are exchanged. Inspired by Hemingway’s work and travels, the drinks menu features fascinating libations that invite patrons to raise a glass in celebration of a life well lived.
