With over 2 million searches for “Pancake Day” and a 781% surge in demand for “pancake toppings” this past month, it’s clear that foodies are ready to celebrate.

The trending pancakes for 2025

Different countries have their own staple pancake recipes, from thick and fluffy to thin and crispy. Here are the trending pancake types ahead of Pancake Day in 2025:

 Leading the charge, Canadian pancakes have seen a 134% surge in searches, totalling 2,000 monthly searches. Known for their thick, fluffy texture, these pancakes are often topped with the iconic maple syrup and enjoyed with bacon, berries, or whipped cream. 

Canada’s pancake breakfast tradition is deeply rooted in Alberta, particularly the Calgary Stampede – a major rodeo and festival held every July. The tradition began in 1923 and spread across the city in the 50s, with businesses and churches hosting pancake breakfasts. The festival is a great place to explore Canadian culture and try their version of pancakes. 

  1. Scotch pancakes take second place with over 20,000 searches

With 21,000 searches, Scotch pancakes are second on the list. Originating in the UK and popular among Brits, these small, thick, and fluffy pancakes are typically served with butter, jam, or syrup. 

Unsurprisingly, Scotland is the birthplace of these pancakes, known locally as drop scones. You can enjoy them authentically in local cafes or small bakeries in Scottish towns like Inverness or St Andrews, along with a hot cup of tea – the best way to experience their traditional taste and texture, just as they have been enjoyed for generations.

  1. Over 5 MILLION searches for crepes land it third place

Dominating the pancake category with a staggering 5.3 million searches, crepes are a global favourite. Originating from France, these thin, delicate pancakes can be filled with a variety of sweet or savoury fillings. With their immense popularity, especially in Colombia, crepes offer endless topping possibilities, making them a versatile treat for Pancake Day celebrations.

Crepes originated in Brittany, a region in northwest France, but their popularity soon spread across the country, especially in cities like Paris. Today, Paris offers a variety of excellent creperies that capture the essence of French cuisine. Whether you try them from a charming cafe or a food stall, Paris is one of the best places to enjoy them authentically.

This combo, originating from Russia, is typically a pancake served with a dollop of sour cream, which adds a rich, tangy flavour to balance the sweetness of the pancake. It’s particularly popular in the US and Canada, where sour cream accompanies various dishes. Traditional Russian restaurants, cafes, bakeries, and diners specialising in Russian cuisine are where this pancake topping is likely to be found in its most authentic form.

  1. Matcha pancake searches skyrocket 296%

Matcha Pancakes follow closely with a 296% increase in searches, reaching 4,000 searches. 

Originating from Japan, matcha pancakes are infused with finely ground green tea powder, giving them a distinct green colour and a mildly bitter, earthy flavour. These pancakes are increasingly popular in Australia, where the matcha trend has taken off recently. The combination of matcha’s health benefits and the appeal of its unique flavour has caused a significant rise in interest, making it one of the most exciting toppings for pancake lovers in 2025.
