BARBS: A New Bajan Fast Casual Concept set to disrupt the UK’s Caribbean Food Scene

A new force in fast-casual dining has arrived in London as Barbs launches via Deliveroo Editions, introducing the UK to a fresh, modern, and scalable take on Bajan cuisine. Founded by entrepreneur Nicc Wright, Barbs is set to redefine Caribbean food in the UK, leveraging a delivery-first model as the foundation for national expansion into bricks-and-mortar locations and retail partnerships.

Barbs’ menu showcases the culinary diversity of Barbados, known as the “foodie capital of the Caribbean” yet its cuisine is not well known in the UK. Barbados has given the world more than incredible food—it’s the birthplace of global icons like Rihanna, whose pride in her Bajan roots has inspired millions. Barbs seeks to channel that same energy, blending tradition and innovation to show the world the beauty and creativity of Barbados

“Rihanna is proof that Barbados has a unique cultural voice that resonates globally,” says Nicc Wright, Founder of Barbs. “Barbs is here to do the same in food.”

Caribbean cuisine has been a rising trend in the UK, but the market has largely been dominated by Jamaican jerk-style offerings. The UK’s growing appetite for authentic international cuisine makes this the perfect moment for Barbs. Despite being the Caribbean’s culinary capital, Barbados’ food remains underrepresented in the UK market. By filling this gap, Barbs is creating a fresh narrative for Caribbean food that celebrates its history and cultural significance

The menu includes:

  • Bajan Fried Chicken / Fish– A twist on a classic, marinated in a mild herb-packed seasoning and coating
  • Bajan Fishcakes – A must-have Bajan staple served with homemade pepper sauce and a milder “fancy sauce”
  • Macaroni Pie – The Bajan version of macaroni cheese
  • Souse – A traditional dish served cold made with pickled pork or chicken.

“We are not just another Caribbean food brand,” explains Head Chef Amanda Powell. “Barbs highlights the full depth of Bajan and Caribbean cuisine, showing the UK that there is more to Caribbean food than just spice and punchy flavours.”

Launching via Deliveroo Editions allows Barbs to reach a broad audience quickly, serving freshly prepared Bajan dishes directly to customers’ homes. With South East London as its first hub, Barbs is tapping into one of the city’s most diverse and food-loving communities. “Editions enables us to focus on quality and efficiency while we build our brand and prepare for bigger things,” explains Wright.

Unlike many independent Caribbean restaurants, Barbs is a tech-enabled company that has been built from the ground up to scale.

  • Multi-Unit Expansion – Plans to launch more dark kitchens and bricks-and-mortar locations across the UK.
  • Retail Rollout – Bajan-inspired sauces, marinades, and meal kits to be available in supermarkets.
  • Franchise & International Growth – The long-term vision includes franchising and taking Bajan food to a global audience.

“While we are a small operation today, we are creating a fast-casual brand that aspires to be the next Nando’s”, says Wright. “The infrastructure, branding, and business model are all designed for scale. With a vision to become an iconic global brand, Barbs is just getting started. The team is already exploring additional sites, retail partnerships, and collaborations with influencers to bring Bajan food to a wider audience. This isn’t just a restaurant—it’s a movement to showcase what Barbados has to offer”
